These Protein Banana Nut Muffins are a wholesome and energizing treat, perfect for breakfast or a post-workout snack. Ripe bananas provide natural sweetness along with potassium to support muscle and heart health, while whey protein powder boosts the protein content to aid in muscle recovery and keep you feeling full longer. Walnuts add a delicious crunch plus heart-healthy omega-3 fatty acids, and a drizzle of pure maple syrup offers a natural source of energy without relying on refined sugars. A dash of cinnamon ties the flavors together while offering antioxidant and anti-inflammatory benefits. Together, these nutrient-packed ingredients create a muffin that’s both satisfying and nourishing.

 

 

Ingredients:

  • 2 1/2 ripe bananas, mashed
  • 1/3 C maple syrup
  • 1/3 C unsweetened almond milk, or milk of choice
  • 1 tsp vanilla extract
  • 1 1/2 C all purpose flour (or gluten-free 1:1 flour)
  • 60 g unflavored (or vanilla) whey protein powder (usually 2 scoops)
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1 C chopped walnuts

Directions:

  1. Preheat oven to 350°F. Place cupcake/muffin papers in a muffin tin.
  2. In a large bowl, mix together mashed bananas, maple syrup, almond milk and vanilla extract.
  3. Stir in the flour through cinnamon and mix well, then stir in chopped walnuts.
  4. Spoon the muffin mixture into the muffin papers, filling each paper about 3/4 of the way to the top.
  5. Bake for 20 minutes or until the tops start to brown slightly.
  6. Let cool and enjoy!
