This Smothered Beef and Bean Burrito with Fresh Salsa offers a delicious balance of easy and delicious. Ingredients:

  • 1 sweet onion, chopped
  • 1 lb ground beef
  • 1 16 oz can refried beans
  • 1/2 C water
  • 1 tsp salt
  • 1/2 tsp smoked paprika
  • 1/8 tsp cayenne pepper
  • 1 tbsp lime juice
  • black pepper to taste
  • 6 flour tortillas
  • 16 oz green chili sauce
  • 1 1/2 C Mexican shredded cheese blend
  • 10 oz cherry tomatoes, halved
  • 3 green onions, chopped
  • 1 tbsp avocado oil
  • 1 1/2 tsp dried cilantro
  • 1/4 tsp salt
  • 1 avocado, chopped or sliced
  • sour cream for topping (optional)

Directions:

  1. Prepare a 13 x 9 pan by coating with avocado oil and set aside. Preheat oven to 375°F.
  2. In a large skillet, combine chopped onion and ground beef. Cook over medium heat until the ground beef is cooked through and the onions are translucent.
  3. Drain the majority of the fat from the skillet.
  4. Add 1/2 C of water, refried beans and seasoning to the skillet. Mix well over medium/low heat.
  5. Once the meat mixture is well combined, evenly divide the mixture into 6 flour tortillas.
  6. Roll each filled tortilla and place it seam down in the prepared pan.
  7. Top the filled tortillas evenly with the green chili sauce and cheese.
  8. Bake in 375°F oven for 30 - 35 minutes or until the cheese just starts to become brown on the edges.
  9. While the burritos are baking, combine the salsa ingredients (tomatoes, green onion, avocado oil, cilantro and salt) in a medium bowl.
  10. Allow the burritos to sit 5 - 10 minutes after removing from the oven. Top with salsa, avocado and sour cream before serving.
  11. Enjoy!
