Smothered Beef and Bean Burritos with Fresh Salsa

This Smothered Beef and Bean Burrito with Fresh Salsa offers a delicious balance of easy and delicious. Ingredients:
- 1 sweet onion, chopped
- 1 lb ground beef
- 1 16 oz can refried beans
- 1/2 C water
- 1 tsp salt
- 1/2 tsp smoked paprika
- 1/8 tsp cayenne pepper
- 1 tbsp lime juice
- black pepper to taste
- 6 flour tortillas
- 16 oz green chili sauce
- 1 1/2 C Mexican shredded cheese blend
- 10 oz cherry tomatoes, halved
- 3 green onions, chopped
- 1 tbsp avocado oil
- 1 1/2 tsp dried cilantro
- 1/4 tsp salt
- 1 avocado, chopped or sliced
- sour cream for topping (optional)
Directions:
- Prepare a 13 x 9 pan by coating with avocado oil and set aside. Preheat oven to 375°F.
- In a large skillet, combine chopped onion and ground beef. Cook over medium heat until the ground beef is cooked through and the onions are translucent.
- Drain the majority of the fat from the skillet.
- Add 1/2 C of water, refried beans and seasoning to the skillet. Mix well over medium/low heat.
- Once the meat mixture is well combined, evenly divide the mixture into 6 flour tortillas.
- Roll each filled tortilla and place it seam down in the prepared pan.
- Top the filled tortillas evenly with the green chili sauce and cheese.
- Bake in 375°F oven for 30 - 35 minutes or until the cheese just starts to become brown on the edges.
- While the burritos are baking, combine the salsa ingredients (tomatoes, green onion, avocado oil, cilantro and salt) in a medium bowl.
- Allow the burritos to sit 5 - 10 minutes after removing from the oven. Top with salsa, avocado and sour cream before serving.
