Chocolate Peanut Butter Chia Pudding

This Chocolate Peanut Butter Chia Pudding is a rich, creamy treat that’s both high in fiber and low in sugar, making it a smart choice for a nourishing breakfast or snack. Chia seeds are loaded with fiber, omega-3 fatty acids, and plant-based protein, helping to support digestion and promote satiety. Unsweetened cocoa provides a deep chocolate flavor along with antioxidants that support heart health, while natural peanut butter adds healthy fats and additional protein to keep you feeling full longer. When made with a low-sugar milk like unsweetened almond, this pudding becomes a balanced option for those looking to reduce added sugars without sacrificing flavor.

 

 

Ingredients:

  • 2/3 C chia seeds
  • 3 tbsp unsweetened cocoa powder
  • 3 tbsp coconut sugar
  • 1/4 C natural peanut butter
  • 2 C unsweetened almond milk or milk of choice
  • 1/2 tsp vanilla extract
  • pinch of salt

Directions:

  1. Add chia seeds to a high powered blend and partially grind the chia seeds at high speed.
  2. Add the cocoa powder, sugar and peanut butter to the blender.
  3. Add the wet ingredients (milk and vanilla) to the blender (you will want to do this last so the pudding does not thicken and clump too quickly). Mix well at high speed.
  4. Add salt to taste.
  5. Transfer the pudding into a glass container and refrigerate for at least 30 minutes before serving.
  6. Divide the pudding between 4 bowls. Top with chopped nuts or chocolate if desired.
  7. Enjoy!
