Chili Garlic Chicken and Asparagus Recipe

Ingredients:
- 3 chicken breasts, cut into bite size pieces
- one bunch of asparagus, cut into 1-2 inch pieces
- 2 tbsp olive oil, divided
- 2 tbsp soy sauce
- 2 tbsp honey
- 1 tbsp chili powder
- 4 garlic cloves
- 2 C cooked rice, quinoa or couscous
- Optional toppings: sesame seeds, chopped green onions, cashews
Directions:
- Add cut chicken breasts to a medium bowl and set aside
- In a small bowl mix together 1 tbsp of olive oil, 2 tbsp soy sauce, 2 tbsp honey, 1 tbsp chili powder and 4 garlic cloves for a marinade mixture.
- Pour approximately half of the marinade mixture over cut chicken breast, stir to coat and let marinade in the refrigerator while cooking the asparagus.
- In a large skill over medium heat, heat 1 tbsp olive oil and add cut asparagus to the pan. Cook 5-6 minutes, stirring frequently.
- Remove the asparagus from the pan and set aside. Add chicken and marinade to the pan and cook until chicken is no longer pink.
- Once chicken is cooked, add back the cooked asparagus and the remaining marinade mixture. Stir well and heat through.
- Serve chicken and asparagus mixture over your choice of cooked grains such as rice, quinoa or couscous.
- If desired, top with sesame seeds, and/or chopped green onions, and/or cashews.
