Apple Pecan Protein Scramble

Ingredients:

  • 1 banana

  • 3 eggs

  • pat of butter

  • sprinkle of cinnamon

  • finely diced apple

  • chopped pecans

  • toasted coconut (optional)

Directions:

  1. Combine banana and eggs in blender and blend about 30 seconds until smooth and airy.

  2. Melt pat of butter in small pan over medium heat. Once butter is melted add egg mixture.

  3. Cook over medium/low heat, stirring frequently until firm.

  4. Place egg mixture on a plate and top with a sprinkle of cinnamon, some diced apple, pecan pieces and coconut.

  5. Enjoy.
