Sausage and Kale Soup

Ingredients:

  • 1 pound ground Italian sausage

  • 1 small onion, chopped

  • 1 teaspoon minced garlic

  • 1 cup chicken broth

  • 2 cups water

  • 2 medium potatoes, peeled and cut into cubes

  • 2 cups thinly sliced fresh kale

  • 1/3 cup heavy cream

  • 3 - 4 slices of bacon, cooked and crumbled

Preparation:

  1. In a large saucepan over medium heat, brown sausage with onion. Drain.

  2. Add minced garlic and cook 1 minute.

  3. Add broth, water and potatoes. Bring to boil and then reduce heat and simmer 25 minutes or until potatoes are cooked.

  4. Add kale, cream and bacon, cook 5 minutes.

  5. Enjoy.
