Crunchy Chicken Salad Lettuce Wraps


  • 1.5 pounds cooked and chopped chicken breast

  • 3 celery stalks

  • 1 cup grapes, sliced in half

  • 1/2 cup avocado oil mayonnaise

  • 1 tablespoon lemon juice

  • 1 tablespoon mustard

  • 1 tablespoon chia seeds

  • 1/2 cup chopped pecans

  • salt and pepper to taste

  • large lettuce leaves (Romaine works well)


  1. Combine chicken, celery and grapes in large bowl and set aside

  2. In a small bowl combine mayonnaise, lemon juice, mustard and chia seeds and mix well.

  3. Pour mayonnaise mixture of chicken mixture and stir until coated.

  4. Stir in pecans

  5. Spoon onto lettuce leaves, wrap and enjoy.
