- Combine all ingredients in a medium bowl and toss until well combined
- 1 Beet, chopped
- 2 Cucumbers, peeled and chopped
- 3 carrots, peeled and chopped
- 2 celery stalks, chopped
- 1/2 C rice vinegar
- 1 Tbsp dill weed
- black pepper to taste
