Apple Pecan Protein Scramble
- Combine banana and eggs in blender and blend about 30 seconds until smooth and airy.
- Melt pat of butter in small pan over medium heat. Once butter is melted add egg mixture.
- Cook over medium/low heat, stirring frequently until firm.
- Place egg mixture on a plate and top with a sprinkle of cinnamon, some diced apple, pecan pieces and coconut.
