Beetroot Chia Pudding with Banana Nut Cream

Serves: 2

Preparation:

  1. Divide one cup Beetroot Chia Pudding between two cups/bowls
  2. Make Banana Nut Cream: add almonds, almond milk and frozen banana to blender and blend until smooth.
  3. Pour half of Banana Nut Cream over each 1/2 C of chia pudding
  4. Optional: top with cocoa nibs, granola, or fresh fruit
  5. Enjoy

Ingredients:

  • 1 C Beetroot Chia Pudding (make ahead, recipe below)

For Banana Nut Cream:

  • 1/4 C raw almonds
  • 1/2 C unsweetened almond milk
  • 1 frozen banana
 

Beetroot Chia Pudding

Preparation:

  1. Mix together almond milk, water, beetroot crystals, protein powder and half and half in a glass jar or similar container
  2. Stir in chia seeds
  3. Cover and refrigerate 6-8 hours, stirring occasionally

Ingredients:

  • 1 C unsweetened vanilla almond milk
  • 1 C water
  • 3 tbsp beetroot crystals (we used Super Beets)
  • 25 g vanilla whey protein powder
  • 2 tbsp half and half
  • 1/2 C chia seeds
